Colombia El Divisio Natural Process
This lot is from friends at Delagua Coffee Paradise, a special project from the same minds at La Palma y El Tucan in northern Colombia that uses minimal water in processing to both protect this important resource and maximize the utilization of the dry climate in the region. Grown by Marco Navarro, then open-air fermented for 18 hours before being dried in the cherry on raised beds for 25 days, this coffee exhibits wildly intense fruit flavors and tons of sweetness. Marco and and his wife Rosa have worked as a team to build a sustainable and high-quality production farm. Their 8 children are now also involved, helping with some of the duties on the farm.
