Not every coffee producer has the means to process their own coffee, or even the ability to produce enough coffee to create an exportable “lot.” This is where the role of a cooperative CoopeTarrazú in the area of Leon Cortes in Costa Rica comes in… producers from nearby towns bring their coffee to collection sites and it is taken to a centralized mill to be sorted, graded and processed. Coffees from the particular towns are kept together, to form representative lots of these micro-regions within Tarrazú. We’re very much enjoying this juicy coffee from the small community of coffee producers in San Antonio.
