Fausto Romo owns the farm “Finca Carolina” where he grows about 7 acres of coffee. This Sidra variety (a cross between Typica and Red Bourbon varieties) is named for its distinct cider-like flavors. The quick 16 hour fermentation and 5 washings of this lot give it a clean a crisp flavor profile, letting the natural quality of this unique coffee variety shine.
