We’re very excited to present our first ever offering from Panama, and it is a stunner. Brought to us by our friends at Creativa Coffee District (the same minds that created La Palma y El Tucan), this coffee from producer Gene Altieri goes through a unique process. The cherries are fermented in the bag in which they arrive at the mill. The bacteria and yeast strains are unique and vary in each batch, and by involving them in the fermentation, they let the essence of the cherry shine in each particular lot. The whole cherries are then laid out on a patio to dry, turned every two hours in Panama’s hot sun and covered at night until the cherries are sufficiently dry (usually about 15 days.) The combination of isolated fermentation and balanced drying gives this coffee a character all it’s own, and it is not one to be missed.
