We visited our friends at La Palma y El Tucan in Cundinamarca, Colombia again in October of 2024 and of course tasted many fantastic coffees, but this lot of Gesha variety (a particular sub-species of coffee originally found in Ethiopia, transplanted to Central and South America) stood out and our crew knew we had to have it here for you all. It was processed in a unique way, going through a fermentation in closed tanks which allows microorganisms that produce lactic acid as a byproduct to proliferate before being pulped then laid out to dry on raised beds. The long, controlled fermentation (along with fantastic terroir and cultivation) leads to a deliciously complex cup with sparkling acidity, candy-like sweetness and a juicy mouthfeel. Truly a coffee not to be missed!
